Cooked rice can harbor Bacillus cereus, which survives reheating if rice sat out too long. Refrigerate rice within 1 hour of cooking, reheat to 165°F until steaming throughout, and reheat only once. Always reheat to 165°F internal, verified with a food thermometer.
How long does white rice keep?
Refrigerated at or below 40°F in an airtight container, white rice keeps about 3 days. If it has been at room temperature for more than 2 hours (1 hour above 90°F), discard it — reheating does not undo unsafe storage.
Can you reheat it twice?
Not recommended for white rice. Each pass through the 40–140°F danger zone adds risk, and quality collapses anyway. Portion out only what you'll eat, reheat that, and leave the rest cold.
